Our Story


The story of Green Street started in 2013, when I was training for an Ironman Triathlon.  During my quest to find the best way to train, I stumbled across a number of athletes who had transitioned to a plant-based, vegan diet.  After doing further research, I made the decision to give plant-based vegan eating a go.  I went plant-based overnight and within a month began to feel simply amazing.  This lifestyle change set my life on a whole new trajectory towards educating others on the benefits of eating more plants.  At the end of my 13th year of teaching health and physical education, I changed career paths to follow my new found passion.  I began speaking about healthy eating and started leading cooking demos and private cooking classes.  Along with my passion to educate others about the benefits of a plant based vegan diet, I also wanted to provide a place for the local community to eat this amazing food.  I decided on a food truck because it allows me to be mobile and to provide a greater number of people the opportunity to enjoy wholesome eating.  I truly believe that the key to living a healthy life starts with the type of food that we put into our bodies.  My intention is to provide high quality food that tastes great and enables everyone who eats it to live a life worth living. 

In 2018 I threw caution to the wind and drained my savings account, retirement account and my kids college savings account. I did all of this to start Long Island’s first and only vegan and gluten-free food truck, Green Street. Fast forward to 2021 we have won numerous awards for our food including being voted as one of the top 4 places to eat on Long Island and winning the coveted title as Long Island’s Best Food Truck.

In late April of 2019 as myself and my wife Lauren took a yoga class fate brought our new business partner Caroline into the Green Street family. Caroline had just returned from the UK and was interested in starting a vegan food truck, a mutual friend introduced us and we gave her the opportunity to test out this new career theory. The daily challenges of the food truck life were met with ideas and enthusiasm. As the food truck continued to gain popularity and business began to grow the conversation began about expanding into a brick and mortar location. After looking for over a year and a half we finally found the perfect location in Levittown. Once again we take a leap into the unknown to start Long Island’s first and only all vegan and gluten-free eatery.
